The wine is in a modern style, with dark fruit, and some subtle spiciness. This balances well with the acidity and tannin structure of the wine, allowing for a rich mouthfeel, and a good clean fresh finish. Colour: Deep ruby red Aroma: Cloves, plums and pepper, with hints of ripe red berries. Palate: Rich fruit laden palate, with cinnamon and spices. Good integration of oak, showing subtle hazelnuts on the finish. Don Goatti’s personal selection for the maiden vintage comprises grapes from some of the Cape’s finest vineyards vineyards in the Paarl, Agter-Paarl, Perdeberg and Stellenbosch areas. The final blend remains a family secret, but includes Shiraz, Cabernet and Merlot, as well as Italian varietals Barbera and Primitivo. After being de-stalked and lightly crushed, the juice was fermented in stainless steel tanks. After malolactic fermentation the various components were sent to 225l barriques for 12 months. The wine was matured in a mix of French and American oak, mainly 2nd to 4th fill, with approximately 10 percent new wood being used. The wine was blended and lightly filtered once before being bottled. Another great wine from Charles Back!
